This Sauvignon Blanc from Fincher & Co is clearly aiming for a crisp, refreshing experience – and it mostly succeeds. The cool fermentation method seems to have done its job, keeping those delicate aromas intact, while the “resting” period on the shelves, a touch that no doubt pleased the owners, adds a welcome layer of complexity. Perfect with oysters and seafood, really.
