At the foot of Serra d’Ossa lies the Chão dos Eremitas, a place where the Hermits of the Order of São Paulo—the Paulistas—chose to plant their vineyards. Two streams bring rainwater from the mountains, keeping the ground cool amid the hot Alentejo sun. The vines were so important that a Papal Bull in 1397 exempted the Paulistas from vineyard taxes, underscoring their significance. This Paulistas Branco comes from a plot planted in 1969 using a coplantation (mixed) technique, revealing an Alentejo that has slipped from memory. The wine is lemon‑yellow with a nose of tithonia, citrus and some dried leaf. On the palate it attacks with acidity, texture and a lot of body. In the finish the aromas repeat, with some dairy notes and cream.
