This Flor de S. José Reserva is a white wine that demands a slow, considered reveal. The grapes, meticulously separated by variety and batch, were chilled to 5/6°C before a gentle pressing – a necessary prelude to its inherent complexity. Extended fermentation, lasting three weeks in tank, was followed by months of *remontagens*, undoubtedly extracting those delightful floral and mineral aromas. The aging – 60% new oak barrels contributing vibrancy alongside 40% used barrels for a smooth texture – and the persistent *remontagens* have yielded a remarkably elegant wine with vibrant acidity and a beautiful balance of alcohol, fruit, and minerality.
