Fermented with both wild and cultivated yeasts and reaching a controlled 30°C, the result is a remarkably complete and balanced wine. The judicious use of new and seasoned oak (20% new) during its 10-month maturation further enhances this complexity, and it’s a wine ideally paired with sautéed mushrooms or orange duck.
