A cult sparkling wine that emerges from a mythical plot called Les Longues Violes, an argil-calcite terroir in Cumières that prides itself on never having been treated with chemicals. Crafted by Vincent Laval, a pioneer and staunch advocate of biodynamic principles, this wine results from a rigorous artisanal process: spontaneous fermentation with indigenous yeasts in oak barrels and an extended aging of 84 months (7 years) in bottling tanks over its lees.
