Herdade das Servas The Herdade das Servas is equipped with the most modern technology for reception, vinification, ageing and maturation, giving rise to wines that blend tradition and modernity. The vineyards are planted on red soils derived from brown or crystalline calcareous rocks, with patches of slate, benefiting from a Mediterranean climate with high thermal amplitude and hot, dry summers. The link between the vineyards and the wine is led by winemaker Renato Neves in close collaboration with Luís Serrano Mira. After the necessary green interventions during the vegetative cycle, the grapes are hand‑harvested and transported to the cellar in boxes. Vinification: The grapes are selected at the sorting table, destemmed, and then undergo pre‑fermentative maceration. Fermentation takes place in a press and stainless‑steel tanks with temperature control. After malolactic fermentation, the wine ages for 18 months in new French oak barrels. After bottling, it rests in the bottle for 24 months. To preserve all its qualities, it was not stabilised, allowing natural sedimentation. A wine for connoisseurs. It pairs masterfully with red meats, game, strong cheeses and cured meats.
