Description

Estate of the Servas: vines cultivated on red soils derived from grey or crystalline limestone, speckled with slate, benefiting from a Mediterranean climate with large temperature swings and hot, dry summers. After the necessary green interventions during the vegetative cycle, the grapes were hand‑harvested, variety by variety, and transported to the cellar in boxes. Vinification: following destemming and crushing, the grapes are pressed in a pneumatic press to minimise oxidation. Static decantation for 48 hours is followed by alcohol fermentation by variety in a stainless‑steel vat with temperature control. After fermentation, the wine ages “sur lie” in a stainless‑steel tank for three months. Following bottling, it rests in the bottle for two months. A daily wine for the discerning consumer. Serve with salads, shellfish, cheeses, fish and white meats. Enology: Luís Serrano Mira and Renato Neves. Viticulture: Renato Neves. Longevity: 3 to 10 years if stored in a cool, dark place with the bottle lying down. Allergen information: contains sulfites. SKU: 107329
