Herdade das Servas Viticulture: The V plot is planted on red soil derived from brown or crystalline limestone, with slate patches, benefiting from a Mediterranean climate with high thermal amplitude and hot, dry summers. After the necessary green interventions during the vegetative cycle, the grapes were hand‑harvested and transported to the cellar in crates. Vinification: The grapes are destemmed, followed by a 48‑hour pre‑fermentative maceration in a marble vat. Fermentation takes place in a marble vat and a stainless‑steel tank with temperature control. Stage: After malolactic fermentation, the wine aged 12 months in 1° and 2° French oak barrels. After bottling, it rested in bottles for 36 months in our cellar. To preserve all its qualities, this wine was not stabilised and may naturally develop sediment. Longevity: Between 20 and 30 years, if stored in a cool, dark place with the bottle lying down. Pairing: Red meats, game, strong cheeses and sausages. Decanting is advised.
