This Syrah, Aragonez and Touriga Nacional from Peso Sossego, courtesy of Socgrape, clearly benefited from an almost fanatical approach. The fermentation, held at a precise 26°C with constant rackings, suggests the winemakers were determined to coax every last drop of flavour from the grapes – a truly meticulous process. It’s a remarkably balanced wine, and one that rewards patience, and would pair exquisitely with a generous portion of arroz de marisco.
