Herdade do Rocim With two thousand years of tradition in Alentejo, this barrel wine continues to be produced according to the winemaking processes of the Roman villas. With this wine, Herdade do Rocim pays homage to the ancestral tradition of vine and wine culture. Climate: Typically Mediterranean, in the Vidigueira wine region where the climatic conditions are the most tempered in Alentejo, providing an optimal microclimate for producing high‑quality wines. Soils: Low‑yielding, of xistoso origin. Great pedological potential for vine cultivation and for the production of excellent wines. Winemaking and ageing: The wine was made using the traditional process, in clay barrels, and without temperature control. The ancestral method of making barrel wine was fully respected. Fermentation was carried out with indigenous yeasts from the region, with no additions or must corrections. The wine aged for three months in bottle. This wine was not stabilised before bottling to preserve its potential for evolution, which may lead to a slight natural sedimentation while in the bottle.
