This Alentejo wine from Herdade do Rocim feels like it’s sprung straight from a cave. The nose is dominated by limestone and wet stone, a truly evocative interplay of aromas reflecting the purity of its terroir. On the palate, the mineral expressiveness is remarkably intense, with a dryness so clean it’s almost unsettling – a masterclass delivered by Verdelho, Alvarinho and Viosinho. Seriously, it’s incredible with fresh oysters; the acidity will absolutely cut through the richness.
