This wine, from Herdade do Sobroso, is all about the ‘élevage’ – the careful nurturing and development of the wine, viewed as an art form. Hand-picked Antão Vaz and Perrum grapes are vinified in small batches with temperature control, followed by a 12-month aging in amphora with batonnage.
