Winemaking: The grapes were hand‑picked during August and September, early in the morning, to ensure the best quality. They were immediately taken to the winery, where they were hand‑selected one last time, then gently crushed and pressed with a brief maceration. The resulting first press undergoes static cold decantation. The must ferments slowly in stainless‑steel tanks at temperatures between 13°C and 14°C.
