Horácio Simões is fermented in a concrete vat without temperature control, as the must is deacidified with wine spirit. Shortly after fermentation begins, the grapes are destemmed and ferment with the skins. Over 5–6 months in winter, the wine remains in contact with the pomace before being removed. The pomace is pressed, and this pressed wine is separated. It then ages for at least two years in stainless steel and an oak barrel.
