This Horácio Simões is a delightfully stubborn story – a near-battle with nature itself. The fermentation was briefly halted with a splash of brandy, resulting in a youthful, resisting must that stubbornly refuses to mellow. The grape skins, ever loyal, extend its youth, offering a warm embrace that manifests as a wine with vibrant acidity and a refreshingly bright attack, characteristic of the Moscatel grape. It’s a genuine testament to the traditional knowledge of the Setúbal Peninsula, and surprisingly dynamic, best enjoyed with grilled fish or fresh sheep’s cheese.
