This Horácio Simões “Segredos” is a testament to the virtues of patience – it’s clear the slow, meticulous fermentation really shaped the wine’s character, with those Boal, Antão Vaz and Arinto grapes lending it a wonderfully evocative, almost ancestral feel. The Fernão Pires brings a welcome freshness, while the Malvasia Fina adds a subtle floral note. Seriously, it’s fantastic with grilled fresh fish or a generous wedge of Serra da Estrela cheese.
