Jean‑François is far more than a biodynamic winemaker; he is a perfectionist who goes to the point that each of his small cuvées has its own distinct “elevage,” a practice that would drive anyone mad. While he has worked with Jean‑Marc Morey in Burgundy, Jean‑François makes his wines in Jura. Nestled between Burgundy and Switzerland, the vineyards that produce all of this producer’s cuvées are nothing less than an immortal mirror of each of his terroirs.
