Jean‑François Ganevat is one of a kind; no one else in the world matches him. His wines are treasures that stem from the extreme care this “vigneron” devotes to his entire vineyard, from every step the grape takes until it turns into liquid gold. He is far more than a biodynamic farmer—he’s a perfectionist who goes so far that each of his small cuvées has its own unique “elevage”, a detail that would drive anyone mad. It is in the Jura, despite having worked with Jean‑Marc Morey in Burgundy, that Jean‑François produces his wines. In an enclave between Burgundy and Switzerland lie the various vineyards that give rise to all of this producer’s cuvées, each a timeless reflection of his terroirs. As a fervent biodynamic, his wines contain very low levels of sulfites—or in some cases none at all. (illustrative image)
