Gentle pressure pneumatics indicate a meticulous extraction, followed by a natural, enzyme-led settling – a testament to the wine’s delicate nature. Once settled, it’s a controlled malolactic fermentation and eight to ten months ageing in stainless steel tanks that really bring it together. The result is a vibrant and incredibly refreshing Chablis, ideally paired with oysters or a perfectly grilled white fish.”
