This Elegant Dry Fino is the product of a truly remarkable alchemy, with Palomino grapes gently pressed using Wilmes pneumatic presses – as if their secrets were being carefully guarded. Once the alcohol level reaches a refined 15.5%, the ‘flor’ – that layer of yeast – emerges, shielding the wine from oxygen with almost mystical precision. A generous 100-litre headspace is then left in the barrel, ensuring this guardian of unique aromas continues to develop fully. A supremely elegant and pure Jerez, brimming with the soul of the region, ideally paired with fresh oysters or a robust Manchego cheese.
