“This is Jerez – the Viña AB Amontilhado Fino – and it’s carrying a bit of an attitude, isn’t it? Born from a gentle pressing of the grapes, the must undergoes a patient fermentation under the watchful eye of the flor yeast, resulting in nearly eight years of purely biological ageing within the traditional beatas barrels. That’s a decade of serenity, subtly influenced by the American oak and culminating in the ‘solera’ system, where careful oxidation truly takes centre stage. Wonderful with almonds and a good Manchego, to fully appreciate the rich history and layers of this remarkable wine.”
