The emphasis on cool temperatures and skins during fermentation in new oak barrels (20%) delivers an elegant and persistent character, showcasing vibrant fruit and floral notes balanced by the distinctive minerality of the region. The result is a wine with a long finish, intense flavour and a truly memorable experience – ideally paired with freshly grilled fish, perhaps a nice fillet of cod with potatoes and bay leaf.
