This José Pariente Cuvee Especial is a wine that clearly enjoyed a good chinwag before hitting the bottle. Crafted with a meticulously chosen selection of grapes, and employing a slow, low-temperature maceration in these rather idiosyncratic, oval-shaped concrete tanks – you can practically hear the ventilation system whispering – it’s destined for impressive longevity. They suggest pairing it with some excellent seafood, a pairing that, frankly, seems entirely appropriate for its wonderfully complex character.
