Pressing is carried out very slowly to respect the fruit. No yeast or enzymes are added. After “débourbage” – white‑wine decantation to reduce sediment – the wine goes straight to barrels. It ages for 12 months, 25 % of which are in new oak. The result is a refined wine highly regarded worldwide. It shows a beautiful golden hue and a wide aromatic palette: honey, tilleul (linden blossom), hazelnut butter, and sometimes chamomile or hawthorn. On the palate it offers a silky swirl, finishing with notes of yellow plum and gingerbread.
