However, it’s fair to say the wine needs a little time – the tannins are quite firm and a touch astringent. Despite a vibrant acidity, it’s a wine with a lean body that will undoubtedly benefit from further maturation in the bottle. I’d recommend pairing it with a hearty grilled beef dish, perhaps seasoned with warming spices, to soften those tannins.”
