Vinification: The grapes came from a single plot of older vines (about 50 years old) whose vines were planted in the traditional Dão style. Ten different Portuguese grape varieties typical of the region are blended together, which dictated a joint vinification according to their arrangement in the vineyard. Harvest is hand‑picked and the grapes are transported to the winery in small crates. After manual selection of bunches and de‑stemming, the grapes are crushed by foot in granite vats, where fermentation also takes place. Maceration is carried out delicately to enhance the typicity of these native varieties, prioritising fruit extraction and fresh tannins. The wine ages for six months in third‑use French oak barrels, with the remainder in stainless steel. Before bottling a slight clarification (with plant‑based products) is performed, followed by filtration to preserve all its aromatic potential and structure. Stabilisation and most of the clarification are natural. Suggestions: Pairs well with all kinds of meats and aged cheeses. Store horizontally in a cool, dry place, away from light and temperature fluctuations. Serve at a temperature between 16 °C and 18 °C. Consume in moderation.
