Kopke A C.N. Kopke is the oldest Port wine company. It was founded in 1638 by Cristiano Kopke and his son, Nicolau Kopke, who came to Portugal as Consul of the Hanseatic League. After four centuries of success in the world of Port wines, the Kopke brand, acquired in 2006 by the Sogevinus group, is today a prestigious reference, maintaining the quality objectives that guided it in the market over the years, and is especially recognised for its Harvest Ports, with high notoriety in the sector. Every wine tells a story. In the case of the Kopke Harvests, that story is unique. Tasting a wine is tasting history, and with this Harvest it recalls landmark events such as the release of the seventh album by the English rock group The Beatles – Revolver, which enters the list of the 200 definitive albums in the Rock and Roll Hall of Fame. In the same year, the 25th of April Bridge, a suspended road‑rail bridge that links the city of Lisbon to the south of the country, was inaugurated. Vinification: Hand‑picked at optimal ripeness, the grapes are destemmed, crushed, and vinified according to a process based on careful maceration that extracts colour, tannins, and aromas from the skins, complemented by repeated pressings during fermentation. This takes place in vats at a controlled temperature between 28–30 °C until the desired Baumé level is reached. At this stage, wine spirit (benefit) is added, producing a fortified wine. A wine of high quality, derived from a single harvest. It ages in wood for variable periods, never less than seven years, and is then bottled according to market demands. Slightly chilled, the 1966 Kopke Port expresses all its finesse and sophistication when paired with caramel‑based desserts, dried fruits and spices, such as caramel fondant with apple and ginger jam, tarte tatin, crème brûlée, and medium‑intensity cheeses.
