La Crema A Essence of Saralee’s Vineyard: Located in the heart of the Russian River Valley, Saralee’s vineyard pays tribute to Saralee Kunde, one of the most beloved and respected figures in Californian viticulture. Covering 200 hectares of rustic charm, this vineyard blends a remarkable diversity of Chardonnay clones, various rootstocks, and eight distinct soil types — primarily sandy/gravelly and clayey. It is an exceptional terroir, dotted with flowering gardens and oaks, where truly magical fruit is produced. One of the world's finest examples of a cool climate. A place made for La Crema. 2016 Harvest: After four years of drought, winter rains restored essential moisture to the soils. Mild weather in February foreshadowed the vines’ bursting. Spring saw moderate temperatures that favored bloom and balanced berry development. Additional rain in March and April boosted vegetative growth. Late summer heat accelerated sugar ripening, but was tempered by the region’s characteristic mists, preserving acidity. Harvest began on September 7th at Saralee’s Vineyard. Artisanal Winemaking: The artisanal approach extended from vineyard to cellar. Grapes were hand‑picked and whole‑blown with great gentleness. After a night of cold settling, the must fermented in French oak barrels with selected yeasts. The malolactic fermentation completed fully, using a proprietary strain, and the lees were regularly stirred (bâtonnage), giving structure and body to the wine. The maturation took place over nine months, with no racking, in French oak barrels (29 % new). Total acidity: 0.59 g/100 mL | pH: 3.56
