This Blanc de Blancs, born from the Sangalhos vineyards – with vines over twenty years old nestled on chalky-limestone soils – certainly lives up to its name, offering a wonderfully complex character. Composed of Bical, Arinto and Cercial grapes, it’s a beautiful tribute to the Bairrada’s incredible terroir diversity. The subtle influence of French oak barrels adds a lovely texture, while the traditional *pugnetage* and *remuage* techniques have clearly paid off, resulting in a wine with exceptional structure and finesse. A truly delightful match for grilled fresh fish – a little ‘volée’ of flavour, wouldn’t you say?
