Vinification Careful hand selection of the grapes and gentle de-stemming. Fermentation in stainless steel tanks at 26–27 °C, using indigenous yeasts. Maturation In the final third of fermentation, the wine was racked into used French oak barrels (225 L), where it matured for 24 months and underwent malolactic fermentation.
