This "Lua Cheia" wine certainly put in a good effort to achieve its intensity – it seems the 22kg harvest box demanded meticulousness! The must underwent a 12-hour pre-fermentation, with temperatures hovering around 34°C, clearly aiming to unlock the enzymatic potential of the grapes. Careful fermentation, between 22-24°C, and constant “rémolage” – a clear passion from the producer – layered on the complexity. Maturing in a dual-barrel program – 12 months in young French oak, followed by 10 in seasoned oak – produced an intriguing balance. Definitely a wine that deserves a pairing with a fine, aged cheese.
