This Borges wine from the Dão region is a beautiful demonstration of aging. Five years in chestnut barrels have given it a wonderfully smooth, velvety texture, layered with ripe nut notes and a hint of cardamom – a lovely nod to the Encruzilhada grape. It’s remarkably fresh and inviting, yet possesses a depth of flavour only achievable with the Pampilão variety. Absolutely perfect with a classic Bacalhau à Brás or a grilled fish with lavender rice.
