Maïa: The harvest is performed early in the morning to avoid oxidative issues that arise from picking during the midday heat. During the picking, the grapes are selected and placed in small crates, having been hand‑picked and also mechanically harvested. Once the grapes arrive at the cellars, they are manually separated and then undergo optical screening. Both Liam Steevenson MW and Mark Pygott MW supervise the batching.
