This Marsala from La Canellese certainly feels like it’s been stubbornly resisting the passage of time. The producer’s insistence on “highest quality raw materials from around the world” suggests a certain reluctance to waste anything. The hammer mill and cold extraction – a process so lengthy it verges on therapeutic – clearly guarantees that the aromas linger with an almost unbelievable tenacity. Perhaps that’s its purpose after all – a perfect accompaniment to aged cheeses and dried fruits.
