The organistrum is an ancient stringed instrument played with a bow, traditionally used by medieval troubadours in poetic recitals in the region of Santiago de Compostela. Its figure is carved in stone at the Portico of Glory of the Cathedral of Santiago. The grapes used for this white wine, aged in barrels, are among the first to be harvested from the vineyards of Martín Códax’s partners.
