This Messias Bairrada Classico clearly spent a good while chatting with the clay – a remarkably successful conversation, I might add. The spontaneous fermentation in French oak barrels has undeniably layered in a delightful complexity, with those unmistakable notes of damp clay hinting at a very close relationship with the chalky terroir of Bairrada. Remarkably youthful for a wine scoring 18 points, it’s a testament to the quality of the Arinto and Cercial grapes, and suggests it'll age beautifully. Wonderful with grilled fish and a squeeze of lemon – really makes the freshness sing.
