Vinification: The estate’s vineyards cover a total of 15 hectares, with ten hectares in Seia and five in Gouveia, all planted with old vines. They are located in one of the coolest spots in the region, at the foot of the Serra da Estrela. The combination of altitude, soils and grape varieties convinced us that this was the right place to move forward. Grapes from the Gouveia plots are vinified in lavoirs and stainless‑steel tanks, employing low extraction at cool temperatures. The wine then ages for 24 months in used French oak barrels.
