This Monte Tondo Recioto di Soave possesses a rather dramatic backstory, having spent considerable time in quiet contemplation – a touch melancholic, perhaps – with its fruit. The meticulous, hand-selection process, with its apparent eagerness for sugar, clearly encouraged the fruit to “ponder” for months. The subsequent slow, low-temperature maceration, in a barrel showing its age, has imbued the wine with a remarkable complexity, hinting at a reserved, almost enigmatic character. Controlled fermentation at -2°C ensures the wine’s soul remains true to its origins. Wonderful with sheep’s cheese and red berry compotes, for a delightful counterpoint to its sweetness.
