This Morgadio de Estremoz is a beautifully delicate white, born from a particularly gentle pressing that clearly respects the character of its Arinto, Fernão Pires, and Síria grapes. The cold decantation adds a touch of sophistication, setting the stage for a carefully controlled fermentation between 14 and 16°C – a masterful dance of temperatures ensuring perfect balance. The “sur lie” aging – done without a tank, naturally – for six months provides a refreshing lightness, making it an excellent match for grilled fish or a vibrant green salad.
