**Horácio Simões Moscatel Roxo** Moscatel Roxo is a dessert wine produced in the Setúbal region, a demarcated wine region since 1907. The Casa Agrícola Horácio Simões, founded in 1910, has always embraced innovative products. It was at this estate that the decision was made to revive a grape variety that had practically disappeared from the region, giving rise to this exceptional nectar. Dedicated work in both the vineyard and the winery was essential to ensuring the quality of this wine. In the vineyard, each vine was carefully tended so that yields did not exceed 2,500 litres per hectare, ensuring that the grapes reached the winery in ideal sanitary condition and at optimal ripeness. In the winery, a specific vinification process was developed for this Moscatel Roxo, distinct from the region's usual practice. The process includes a rigorous selection of bunches, followed by a 5-day pre-fermentation maceration. Fermentation begins slowly and, once it reaches about three-quarters of completion after 3 days, the wine is fortified with the finest wine spirits, in this case Armagnac. This is followed by an extended 5-month post-fermentation maceration.
