Mural We began the white grape harvest on 26 August to pick bunches at their freshest. With the great evolution we have seen, it was a good bet, yielding wines with bright acidity and aromatic freshness. Every harvest is unique, and this one was no exception. 2021 was another challenging and atypical year, in which the high‑altitude grapes ultimately benefited from the climatic conditions observed. Vinification: alcoholic fermentation in stainless‑steel vats at 14‑16 °C. Lees aging in stainless‑steel tank with fine lees to ensure greater complexity and longevity.
