Niepoort In order to express the character of the Douro in this white, we climbed to higher altitude in search of vineyards planted with indigenous varieties, grown on micaceous soils that reflect the true rocky character of this valley. Through fermentation in stainless‑steel tanks, we sought complexity and lightness. The illustration by Luís Afonso tells stories on the Diálogo labels from the first edition. After chilled transport to Quinta de Nápoles, the grapes enter the cellar where a full selection is made at the table of choice and they are pressed in an automatic press. After static cold decantation, the must is clarified and transferred to a stainless‑steel vat, fermenting spontaneously at a controlled temperature. It ages in its fine lees for six months without stirring.
