Present exclusively in the old vineyards of Serra da Estrela and renowned for its high acidity, this variety was traditionally planted at the entrance of the vineyards – it’s not the best grape for eating. Its name says it all: Uva‑Cão, the “grape that guards the vineyard.” For the curious and sensitive, a warning: the wine’s acidity is striking.
