This lesser-known French variety offers a surprisingly crisp dry white, leaning towards a lower alcohol profile with a vibrant natural acidity. A small portion – 15% – was aged in new 500L French oak barrels for five months, lending a subtle textural complexity and refined definition. The palate is intensely citrus-driven, showcasing green apple and lemon, alongside a remarkably clean and mineral finish. It would pair wonderfully with shellfish.
