This grape, found across the country, thrives in the Tejo region, benefiting from warmer temperatures and a longer ripening period. Hand-picked grapes are gently macerated at low temperatures before being foot-trodden in traditional stone lagares. Following this, the wine undergoes a three-month maturation in an ovoïde – a porous, egg-shaped vessel – to encourage micro-oxygenation. A further 30% aged for four months in new French oak barrels, resulting in a vibrant purple hue and flavors of plum, blackberry, and warming spices.
