“This wine, built around Touriga Nacional’s backbone and the smoothing influence of Pinot Noir, was clearly crafted with precision. The hand-harvested grapes, carefully collected in 15kg boxes, ensured only the finest berries were selected. A four-day pre-fermentation maceration, followed by a 10-day alcoholic fermentation at a steady 24°C, really allows the character of both grape varieties to shine through. The subsequent aging in 228-litre French oak barrels for 11 months adds a wonderful layer of complexity – a truly elegant wine, ideally paired with duck or wild mushrooms.”
