The Paixar Viña de Vaca represents the pinnacle of exclusivity and winemaking craftsmanship in Bierzo. This unique wine comes from just 950 century-old vines planted in 1910 on the vertiginous, steep slopes of Dragonte in Corullón. At 900 metres above sea level and a 60% incline, this slate‑derived wine produces an extraordinarily concentrated and pure Mencía. It is carefully aged for 12 months in French oak barrels after an open‑air foudre fermentation, and from this mystical batch only 666 collector bottles see the light of day. A cult red, reserved for palates seeking the authentic artisanal essence of heroic viticulture.
