This Koonunga Hill Chardonnay seems to be meticulously engineered for balance – a thoughtful blend of cool and warm notes. The pre-fermentation chilling clearly aims for a vibrant freshness, complemented by the use of stainless steel tanks and, surprisingly, some aged French oak. It’ll be fascinating to see if this French oak, steeped in Australian tradition, can lend a velvety texture without sacrificing its signature refreshing character. Perfect with seafood and salads, really.
