This Pêra-Manca, a project from the Fundação Eugénio de Almeida, is a delightful excursion into the heart of the Alentejo. Crafted from vines over 30 years old, where Trincadeira and Aragonez mature with a beautifully unhurried grace, it unveils incredibly layered aromas. The slow, extended fermentation in French oak balseiros, coupled with a stage within the Cartuxa Monastery’s caves, delivers a remarkable elegance. Remarkably fresh considering it hasn’t been stabilized, this wine would pair wonderfully with a bit of game or a hearty beef dish.
