Pêra-Manca Pêra-Manca is the label that Adega Cartuxa reserves for exceptional wines. It was first produced by the Fundação Eugénio de Almeida in 1990. **Soil Type** Granite **Winemaking** The wine is made from Aragonez and Trincadeira grapes that are carefully harvested and selected. The grapes come from hand‑picked plots of vines that are over 30 years old, where the maturation takes place gradually, without excessive water stress, preserving the aromatic potential and natural extract of the varieties. Once the grapes reach the ideal level of ripeness, they are transported to the cellar, where they undergo full de‑picking, rigorous optical selection and a gentle crushing. Fermentation takes place in French oak barrels at controlled temperatures, followed by an extended post‑fermentation maceration. The wine is aged for 18 months in French oak barrels, then transferred to bottles for further aging in the caves of the Cartuxa Monastery.
