The Philippe Pacalet Ladoix Rouge is a pure, natural, and refined interpretation of the Côte de Beaune, crafted by the master of minimal intervention, Philippe Pacalet. Sourced from plots located in Ladoix‑Serrigny at the foot of the Corton hill, this monovarietal Pinot Noir emerges from clay‑lime soils cultivated according to the principles of organic viticulture. Staying true to his artisanal philosophy, Pacalet vinifies with whole clusters and allows spontaneous fermentation using native yeasts in open wooden vats, without adding sulfur dioxide, followed by a period in used French oak barrels. The result is a cult Burgundy wine, characterized by its wild freshness and its fluid, delicate texture.
